Every culture seems to have its own version of rice pudding, and Parsis are no exception! A simple and healthy dessert to serve at family meals or for larger crowds, Doodh Pak is a milky almond and rice pudding, flavoured with vanilla or rose water, and cardamom powder. It is often served with fresh puris (fried bread).

Ingredients

  • 8 cups whole milk
  • 1-cup plus 1 tbsp of sugar

Method

In a large pot, heat the milk and stir in the sugar until it is all dissolved. Bring to a boil and then add the ground almond and crushed rice. Lower the heat and allow this to cook for half an hour, stirring from time to time.

Now add the salt and evaporated milk and cook for another 30 minutes, still on a low heat. The mixture should be thickened and creamy. Add the ground cardamom, r
