Goulash originates from Hungary, while spôtzle come from Stuttgart in Germany. How they came together in this part of Italy, I don’t really know, but they combine well. In Trentino, as in Germany, a special perforated tool called a spôtzle plate, which fits over a saucepan, is used to shape the spôtzle, but I find the large-holed side of a cheese grater works fine. As an alternative, you could serve the goulash with boiled potatoes.
